Arugula Salad with Pancetta and Mushrooms
A delightful salad featuring the peppery taste of arugula, combined with sautéed mushrooms, pancetta, and goat cheese.

Ingredients
- 1 container Arugula
- 1 8oz pkg baby bella mushrooms
- 1 8oz pkg shitake mushroom mix
- Cubed pancetta
- Goat cheese
- 3 Tbs olive oil
- Extra virgin olive oil and good balsamic vinegar
- Salt and pepper
Preparation
- 1.Thinly slice mushrooms and sauté in olive oil, salt, and pepper.
- 2.Sauté pancetta until slightly browned.
- 3.Combine mushrooms and pancetta.
- 4.Plate arugula.
- 5.Top with mushrooms and pancetta.
- 6.Crumble goat cheese.
- 7.Drizzle with olive oil and balsamic vinegar.
