Ingredients

  • 1 container Arugula
  • 1 8oz pkg baby bella mushrooms
  • 1 8oz pkg shitake mushroom mix
  • Cubed pancetta
  • Goat cheese
  • 3 Tbs olive oil
  • Extra virgin olive oil and good balsamic vinegar
  • Salt and pepper

Preparation

  1. 1.Thinly slice mushrooms and sauté in olive oil, salt, and pepper.
  2. 2.Sauté pancetta until slightly browned.
  3. 3.Combine mushrooms and pancetta.
  4. 4.Plate arugula.
  5. 5.Top with mushrooms and pancetta.
  6. 6.Crumble goat cheese.
  7. 7.Drizzle with olive oil and balsamic vinegar.
