Caesar Salad

A classic Caesar salad with homemade dressing, perfect for a fresh and delicious starter.

Roasted Tomato Soup

Ingredients

  • Romaine lettuce - for 4 people
  • Olive oil (extra virgin)
  • Balsamic vinegar (good quality) or red wine vinegar
  • 4 Anchovy filets
  • 3 cloves of garlic minced
  • 1 tsp grey poupon
  • Lemon
  • 1/3 c. grated parmesan
  • 1 egg
  • Large Texas toast croutons
  • Kosher salt
  • Cracked black pepper
  • Shaved parmesan to taste

Preparation

  1. 1.Spritz 4 filets with fresh lemon. Let rest.
  2. 2.In a large wooden bowl, mince 3 garlic cloves in the bottom of the bowl using a small amount of kosher salt to assist in mincing.
  3. 3.Add anchovies and mince with garlic until a paste is formed.
  4. 4.Add a teaspoon of Dijon mustard and blend in with fork.
  5. 5.Add 3-4 tablespoons of olive oil.
  6. 6.Add 3-4 tablespoons of balsamic (or red wine vinegar).
  7. 7.Mix well.
  8. 8.Add egg and mix.
  9. 9.Kosher salt and cracked black pepper to taste.
  10. 10.Add romaine torn into small pieces.
  11. 11.Add parmesan cheese (about 1/3 cup) and mix (coating romaine).
  12. 12.Add croutons - mix.
  13. 13.Serve with shaved parmesan on top to finish.
