Iron Skillet Salmon in Roasted Butter

Roasted Tomato Soup

Ingredients

  • 1 salmon fillet (preferably King salmon) - 1 1/2 to 2 lbs for 2-4 people
  • 1/2 stick of butter
  • 4 Tbs of minced herb either dill or parsley (parsley preferred)
  • Salt and pepper to taste
  • Lemon slices

Preparation

  1. 1.Preheat oven to 475 degrees. Place a half of stick of butter in an iron skillet or roasting pan. Melt butter on stove and add 2 tablespoons of your herb. Place skillet in oven for 4 minutes until butter is brown and herbs are sizzling.
  2. 2.Add salmon with salt and pepper, skin side up. Roast for 4 minutes.
  3. 3.Remove from the oven. Take a fork inserting one prong under the skin and roll the skin off around the fork.
  4. 4.Salt and pepper to taste.
  5. 5.Flip salmon and roast another 3 minutes for medium rare.
  6. 6.Plate and spoon some butter from pan. Spritz with lemon, garnish with remaining herbs.
