Lemon Chicken (Everyone's Favorite!)

A classic lemon chicken recipe that's simple to prepare and always a hit with everyone.

Ingredients

  • 4 deboned and skinless chicken breasts
  • Flour
  • 3 eggs
  • 1 Tbs fresh flat leaf parsley chopped
  • 2 lemons (zest and juice)
  • 6 Tbs butter (4 for lemon butter sauce)
  • Salt and pepper

Preparation

  1. 1.Preheat oven to 350 degrees.
  2. 2.Pound chicken breasts to 3/4 inch (pound between cling wrap).
  3. 3.Salt and pepper both sides.
  4. 4.Dredge in flour. Shake off excess.
  5. 5.Prepare an egg wash by adding 1 tablespoon chopped parsley and lemon zest to the eggs.
  6. 6.Dredge chicken again in flour and egg wash.
  7. 7.Lightly brown in skillet with butter on medium high heat for 3 minutes per side.
  8. 8.Place in Pyrex baking dish.
  9. 9.Bake for 10 minutes.
  10. 10.While baking, melt 4-5 tablespoons of butter, add juice from 1 and 1/2 lemons, and 1 tablespoon chopped parsley.
  11. 11.Remove chicken from oven.
  12. 12.Pour butter lemon sauce over chicken and serve.
