Mediterranean Chicken Breast

Ingredients
- 4 skinless deboned chicken breasts
- 3 Tbs olive oil
- Flour for dredging
- Salt and pepper
- Mediterranean topping - Julienned sun-dried tomatoes, sliced olives, capers, marinated artichokes, anchovies, shallots, garlic, diced chunky tomatoes, baby spinach
Preparation
- 1.Pound chicken breasts to 1/2 inch.
- 2.Salt and pepper each breast.
- 3.Dredge in flour.
- 4.Sauté in pan with 3 tablespoons of olive oil on medium high heat for 3 minutes per side.
- 5.Remove breasts and tent with aluminum foil.
- 6.Sauté Mediterranean ingredients of your choosing.
- 7.Add chicken breasts back to pan with juices.
- 8.Coat chicken breast with toppings and sauté for 3 more minutes.
- 9.Plate chicken breasts and add toppings.
