Mediterranean Chicken Breast

Ingredients

  • 4 skinless deboned chicken breasts
  • 3 Tbs olive oil
  • Flour for dredging
  • Salt and pepper
  • Mediterranean topping - Julienned sun-dried tomatoes, sliced olives, capers, marinated artichokes, anchovies, shallots, garlic, diced chunky tomatoes, baby spinach

Preparation

  1. 1.Pound chicken breasts to 1/2 inch.
  2. 2.Salt and pepper each breast.
  3. 3.Dredge in flour.
  4. 4.Sauté in pan with 3 tablespoons of olive oil on medium high heat for 3 minutes per side.
  5. 5.Remove breasts and tent with aluminum foil.
  6. 6.Sauté Mediterranean ingredients of your choosing.
  7. 7.Add chicken breasts back to pan with juices.
  8. 8.Coat chicken breast with toppings and sauté for 3 more minutes.
  9. 9.Plate chicken breasts and add toppings.
