Pasta with Olive Oil and Garlic Sauce

Ingredients

  • 1/3 cup olive oil
  • 10 cloves of garlic, minced
  • 1/2 tsp red pepper flakes
  • Non-pareil capers, well-drained and rinsed
  • Anchovies – 4, minced with a light squeeze of lemon juice
  • 1 lb dried spaghetti
  • Grated pecorino to taste

Preparation

  1. 1.Bring salted water to a rolling boil (no oil!).
  2. 2.Cook pasta as directed.
  3. 3.In a preheated sauce pan, add oil, red pepper flakes, capers, and anchovy paste.
  4. 4.Sauté for 2 minutes.
  5. 5.Add garlic. Sauté until lightly golden.
  6. 6.Add pasta to sauce pan and toss. Plate.
  7. 7.Add pecorino to taste.
