Puttanesca Sauce

(Not “Prostitute Sauce”, although its aroma will lure anyone into the kitchen, but “Delicious Sauce” - translation)

Ingredients

  • 3 Tbs olive oil
  • 5 cloves of garlic peeled and smashed
  • 5 anchovy filets (more or less to taste)
  • 1 28oz can whole plum tomatoes (drained)
  • 1/2 c. pitted oil-cured black olives (Kalamata olives work as well)
  • 2 Tbs drained capers
  • Crushed red pepper flakes to taste
  • Salt and pepper
  • 1 lb. spaghetti
  • Chopped basil and Italian parsley for garnish

Preparation

  1. 1.Medium-low heat, add olive oil to skillet. Use cast iron if possible.
  2. 2.Sauté garlic and anchovies until garlic is golden.
  3. 3.Crush drained tomatoes with hands into pan; add salt and pepper.
  4. 4.Cook for 10 minutes on medium-high heat.
  5. 5.Stir in all other ingredients and simmer to meld flavors (5-10 minutes).
  6. 6.Add cooked pasta (al dente) to the skillet; toss to coat.
  7. 7.Top with fresh herb garnish and serve.
