Puttanesca Sauce
(Not “Prostitute Sauce”, although its aroma will lure anyone into the kitchen, but “Delicious Sauce” - translation)

Ingredients
- 3 Tbs olive oil
- 5 cloves of garlic peeled and smashed
- 5 anchovy filets (more or less to taste)
- 1 28oz can whole plum tomatoes (drained)
- 1/2 c. pitted oil-cured black olives (Kalamata olives work as well)
- 2 Tbs drained capers
- Crushed red pepper flakes to taste
- Salt and pepper
- 1 lb. spaghetti
- Chopped basil and Italian parsley for garnish
Preparation
- 1.Medium-low heat, add olive oil to skillet. Use cast iron if possible.
- 2.Sauté garlic and anchovies until garlic is golden.
- 3.Crush drained tomatoes with hands into pan; add salt and pepper.
- 4.Cook for 10 minutes on medium-high heat.
- 5.Stir in all other ingredients and simmer to meld flavors (5-10 minutes).
- 6.Add cooked pasta (al dente) to the skillet; toss to coat.
- 7.Top with fresh herb garnish and serve.
