Roasted Red Pepper Sauce

A vibrant and velvety sauce made from roasted red peppers, perfect as a topping for meats.

Ingredients

  • 4-5 red peppers
  • 3 Tbs extra virgin olive oil
  • Juice of half a lemon
  • Salt to taste

Preparation

  1. 1.Broil or grill red peppers until the skin is blackened, turning peppers as needed.
  2. 2.Wrap peppers in aluminum foil after grilling. Let sit wrapped for 20 minutes to continue cooking.
  3. 3.Let peppers cool, then cut and peel off the blackened skin, removing all skin and seeds.
  4. 4.Place in a blender.
  5. 5.Add olive oil and juice of 1/2 lemon. Season with salt to taste.
  6. 6.Blend until smooth and serve.
  7. 7.Optional: For a nice side dish, serve just the roasted peppers drizzled with olive oil and fresh minced garlic (salt to taste) and sliced Havarti cheese. This also serves as a nice sauce to accompany jumbo lump crab cakes.
