Roasted Red Pepper Sauce
A vibrant and velvety sauce made from roasted red peppers, perfect as a topping for meats.

Ingredients
- 4-5 red peppers
- 3 Tbs extra virgin olive oil
- Juice of half a lemon
- Salt to taste
Preparation
- 1.Broil or grill red peppers until the skin is blackened, turning peppers as needed.
- 2.Wrap peppers in aluminum foil after grilling. Let sit wrapped for 20 minutes to continue cooking.
- 3.Let peppers cool, then cut and peel off the blackened skin, removing all skin and seeds.
- 4.Place in a blender.
- 5.Add olive oil and juice of 1/2 lemon. Season with salt to taste.
- 6.Blend until smooth and serve.
- 7.Optional: For a nice side dish, serve just the roasted peppers drizzled with olive oil and fresh minced garlic (salt to taste) and sliced Havarti cheese. This also serves as a nice sauce to accompany jumbo lump crab cakes.
