Standing Rib Roast – The King a.k.a. The Christmas Roast Beast

Ingredients

  • 3 ribs (or more) prime rib roast cut from the Chuck end
  • Kosher salt
  • Bay leaves
  • Pink and black peppercorns
  • Splash of vodka – not to drink!

Preparation

  1. 1.Lightly wash roast with vodka.
  2. 2.Cut small slits (6) to insert bay leaves (don’t insert yet).
  3. 3.Salt liberally – kosher coarse salt.
  4. 4.In a mortar and pestle crush pink peppercorns.
  5. 5.Coat roast liberally with pink and black peppercorns.
  6. 6.Insert bay leaves so half of the leaf is in the roast.
  7. 7.Preheat oven to 450.
  8. 8.Roast for 20 minutes then reduce oven to 350.
  9. 9.Roast for approximately 1 ½ hours checking temp at 1 hour (rule of thumb is about 20 minutes per pound). 120 degrees for medium rare.
  10. 10.Tent roast with aluminum foil and let rest for 30 minutes.
  11. 11.Carve it up! Serve and watch what happens!
