Stuffed Poblano Peppers

A flavorful dish using mild poblanos stuffed with sausage, topped with tomato sauce and mozzarella.

Ingredients

  • 4 peppers or more
  • 1 ½ lb sausage of your choosing
  • 28 oz can of good tomato sauce such as Pomodoro S. Manzano
  • Mozzarella shredded cheese
  • Olive oil

Preparation

  1. 1.Heat oven to 350 degrees. Cap peppers and remove the seeds. Stuff peppers with sausage (try to get the sausage down into the tip).
  2. 2.In a baking pan, drizzle stuffed poblanos with olive oil and bake for 20 minutes. Then add tomato sauce. Bake for another 15 minutes. Top with mozzarella cheese. Bake another 5-10 minutes.
  3. 3.That’s it! Serve it as an appetizer or even a meal on a fall day.
