Tuna Tartare

A delicious and refined dish featuring sushi-grade tuna with mint, pear, and a hint of paprika.

Roasted Tomato Soup

Ingredients

  • 1 lb Shushi grade tuna (ask for a block cut)
  • 1/4 c. pine nuts
  • 2 Tbs minced pear
  • 1 Tbs thinly julienned fresh mint leaves
  • 2 Tbs hot sesame seed oil
  • 1 Tbs plain sesame seed oil
  • 1 egg yolk
  • 1 tsp paprika
  • Sea salt to taste

Preparation

  1. 1.Mince tuna, removing silver skin if necessary. (You can use your knife blade to remove the fish from the silver skin.)
  2. 2.Toast pine nuts in a small pan over medium heat (must watch this carefully).
  3. 3.Combine all ingredients with your hands, and plate the tartare.
  4. 4.Lightly coat with paprika and sea salt.
  5. 5.Serve with toast points.
