Tuna Tartare
A delicious and refined dish featuring sushi-grade tuna with mint, pear, and a hint of paprika.

Ingredients
- 1 lb Shushi grade tuna (ask for a block cut)
 - 1/4 c. pine nuts
 - 2 Tbs minced pear
 - 1 Tbs thinly julienned fresh mint leaves
 - 2 Tbs hot sesame seed oil
 - 1 Tbs plain sesame seed oil
 - 1 egg yolk
 - 1 tsp paprika
 - Sea salt to taste
 
Preparation
- 1.Mince tuna, removing silver skin if necessary. (You can use your knife blade to remove the fish from the silver skin.)
 - 2.Toast pine nuts in a small pan over medium heat (must watch this carefully).
 - 3.Combine all ingredients with your hands, and plate the tartare.
 - 4.Lightly coat with paprika and sea salt.
 - 5.Serve with toast points.
