Basic Pomodoro Sauce (Marinara)
A rich and classic tomato sauce, perfect for pasta and a base for other Italian dishes.
Marinara Sauce with a Fresh Twist
As you know, I have a love for canned Pomodoro S. Manzano Dell’agro Sarnese-Nocerino D.O.P. Certified Tomatoes. I use them in all my red sauces. I was playing around with my marinara sauce (chunkier than pomodoro, which I emulsify, but otherwise virtually identical ingredients) and added 3 twists! Which I think makes for a beautiful chunky marinara - perfect over dry pasta.
Puttanesca Sauce
(Not “Prostitute Sauce”, although its aroma will lure anyone into the kitchen, but “Delicious Sauce” - translation)
Roasted Red Pepper Sauce
A vibrant and velvety sauce made from roasted red peppers, perfect as a topping for meats.
Simple Bolognese
Bolognese is really just meat sauce. Traditional mixes veal, beef and pork but you can also use short rib or even chuck roast if you want a shredded meat sauce.
